As this year comes to a close, let’s celebrate together (virtually, of course) all we’ve overcome with bubbly, tasty, champagne cupcakes! A perfect treat for New Years Eve.

You’ll need:

Cupcakes:

2 cups Flour

⅓  cup cornstarch

½ teaspoon of salt

3 teaspoons baking powder

¾ cup unsalted butter, softened

1 ½ cups granulated sugar

3 large eggs

1 cup champagne bubbly 

Soak:

¼ cup champagne

¼ sugar

Frosting:

~1 cup unsalted butter, softened (you can add a little more for a richer flavor)

5 cups powdered sugar

2 tablespoons champagne

2-4 tablespoons heavy whipping cream

~½ teaspoon vanilla

~½ teaspoon salt

gold sprinkles and/or strawberries to top (optional)

Eriel Milan Brown is a NY based performing artist who graduated from the University of California Irvine with a Bachelors in Musical Theatre in Spring of 2019. In December of 2018, Eriel started her cookie baking business EBakesCookies to raise money for headshots. Little did she know her business would take off as it has, and since then she’s baked and shipped cookies to customers all across the United States.
